Cherry cask finishes are usually found in Scotch, not bourbon. Toasted cherry finish will give you a cherry blossom orchard nose, and a sweet fruit forward palate. But where cherry really shines is in the finish. It creates a very long, very lingering finish that develops increasing cherry and stone fruit notes the longer you let it linger. Its a really amazing and interesting experience.
